The "Vegan" Easter Bunny LOVES Carrot Cake!


Well, we all know that the Easter Bunny is vegan right?  Carrots are his favorite.  In honor of the bunny I made this quick, easy, delicious carrot cake.  I know it is a little bit early, but I wanted to make one just to make sure it was tasty enough for the bunny himself.  So, I will make another one (or two) later.  

This recipe is my gift to you all.  To celebrate Easter, or Spring, or...well...Monday!  I hope you try it, enjoy it, share it, and let me know what you think.  It's healthy, I know, because in the recipe there is CARROT! 

BTW...the piece of delicious carrot cake pictured above has long been devoured!

Carrot Cake

1 1/2  cups flour
3/4  cup sugar
2  tsp baking powder
1  tsp cinnamon
1/4  tsp salt
3/4  cup vegan milk (I use almond milk)
2  tsp vanilla extract
1/4  cup oil
egg replacer equal to 1 egg (1 banana mashed, 3 tbsp applesauce, 2 tbsp ground flax seed+3 tbsp water)
1/2  cup carrot<---- theres's the Healthy ;) grated
1  tsp fresh ginger, grated 
1/2-3/4  cups walnuts (optional)

Preheat oven to 350°.  In bowl stir together all dry ingredients.  Add remaining ingredients and stir until just mixed.  Pour into a lightly oiled 9-in cake pan and bake for 30-40 minutes or until a toothpick or knife  to the center comes out clean.

Better than Cream Cheese Frosting

3/4-1 cup of vegan cream cheese
2  tbsp vegan margarine (Earth Balance rules!)
2-2 1/2   cups powdered sugar
1-2  tsp vanilla

In a mixing bowl, use electric mixer to mix ingredients well.  I start with the low end of the ingredients measurements and add to taste and desired consistency.  You can't mess it up it's all good!

  1. Sooo....theoretically....if I don't use Vegan ingredients....the bunny won't eat it....and there will be more for me? This looks DIVINE!!!
